Il nome deriva dal vocabolo papassa o pabassa che in lingua sarda significa uva sultanina. Ogni paese dell’Isola prepara il dolce in diversi modi e gli ingredienti variano a seconda della regione storica ma sempre con la costante presenza dell’uva passa. La loro preparazione è legata alle ricorrenze autunnali, periodo nel quale l’uva passa raggiunge la maturazione

2 bicchierini di grappa (filu e ferru)
400gr. tra mandorle, noci e uva passa
1 bustina di vanillina
2 buste di lievito per dolci
1 cucchiaino di ammoniaca per dolci
350gr. di zucchero semolato
1 bicchiere di latte tiepido
320gr. di zucchero a velo
The papassinu or papassina (Italianised in papassino) is a sweet type of Sardinia, also called pabassinu, pabassino or pabassina (in the singular) and papassinos, pabassinas, pabassinos, and in Italian papassini (in the plural). Traditionally they are prepared for the recurrence of All Saints and Easter. They are made from a mixture of shortbread and raisins, almonds, walnuts, lemon zest (or orange) and grated honey.
The name derives from the word papassa or pabassa that in Sardinian language means sultanas. Each island country prepares the dessert in different ways and the ingredients vary depending on the historical region but always with the constant presence of raisins. Their preparation is linked to the autumn recurrences, a period in which the raisin reaches maturity

2 bags of baking powder
1 teaspoon of ammonia for sweets
350gr. of granulated sugar
1 glass of warm milk
320gr. of powdered sugar
