La sablé è molto burrosa e friabile, la potete usare sia per biscotti che per crostate ed è anche facilissima e molto veloce. A differenza della classica pasta frolla dove si utilizza il burro a temperatura ambiente e decisamente morbido, questa ricetta utilizza il burro freddissimo di frigo e tagliato a pezzetti e va lavorata velocemente per evitare di scaldare il più possibile l’impasto che diventerà sabbioso e da qui il nome di questa pasta frolla particolare.

The double donuts are a classic of Sardinian pastry, they are made in two versions, soft or crumbly. These in particular are a revisitation obtained by adapting a base paste typical of French pastry, the sablé pasta, a sort of very crumbly short pastry that is easy to machine made.
The sablé is very buttery and crumbly, you can use it for both biscuits and tarts and it is also very easy and very fast. Unlike the classic shortcrust pastry where the butter is used at room temperature and decidedly soft, this recipe uses the cold butter from the fridge and cut into small pieces and should be processed quickly to avoid heating the dough as much as possible and becoming sandy and from here the name of this particular short pastry.
