Sardinian yeast (Framentu) is a very old product, made from a few simple ingredients in almost all the houses of our grandmothers. It is a variant of the yeast used throughout the peninsula, but this is created from honey and not from fruit as in the more general case. There are also recipes that include the use of Sardinian yogurt, the famous fermented milk called gioddu.
But now let’s see how to get ready … Because often when you need to make it happen you ask a neighbor or a relative who has one of his stock, but what happens when you want to achieve this from scratch?
We begin to say that it will take 5 days to get a usable product and that once it is ready it does not have a good smell since it is a fermentation that then focuses on acid.
INGREDIENTS:
- 200g of flour (the 00 is fine too, although a less refined one would be better)
- 1 teaspoon of extra virgin olive oil
- 1 teaspoon of honey
- water q.b to knead and get a soft ball
