La fregula con i gamberi è un piatto tipico della tradizione culinaria di mare sarda.

Ingredients

  • Fregula – 300 gr
  • Shrimps – 300 gr
  • Vegetable broth – 1 lt
  • Cherry tomatoes – 150 gr
  • Parsley
  • Garlic – 1 clove
  • salt
  • Extra virgin olive oil

Preparation

Shell the shrimps, remove the intestinal line, wash and dry them, leaving a few whole that will also serve as decoration. Prepare a comic book with the shrimp heads. Wash the tomatoes and cut them into small pieces. Put the oil with the garlic clove in a saucepan and let it brown. Remove the garlic, add the tomatoes and cook for 5 minutes. Add the fregola and toast it. Bring the fregola to cooking adding the hot stock little by little. Five minutes after the end of cooking, add the prawns, parsley and salt. Cook for the remaining five minutes and switch off.

The fregula with shrimps is a typical dish of Sardinian sea culinary tradition.
