The field ham (Agaricus campestris) is a mushroom of the family of the Agaricaceae variously appreciated; in some countries it is considered the best mushroom, while it is rejected elsewhere. The Romans considered it excellent, as the verses of Horace “Pratensibus optima fungis / Natura est; aliis male creditur” (in Italian: the champignons is the best mushroom in nature, others do not need to trust).
Globulose with margins joined to the stem, then hemispherical and finally plane-convex, 5-20 cm in diameter; acute margins with veil residue; white-yellowish cuticle, brown when ripe, floccose-silky and sometimes scaly. The lamellae curved towards the margin, free to the stem; carnicine, then rosy or vinous red and finally brown-violet. They do not have to be white, in case it can be a Leucoagaricus leucothites (unproven edibility) or a deadly amanita.
