Ingredienti per 4 persone
Per la pasta
350 g di farina integrale
acqua fredda q.b.
Per il sugo
1 spicchio d’aglio
1 cucchiaio di cipolla tritata finemente
6 grossi pomodori maturi
basilico fresco q.b.
prezzemolo fresco q.b.
sale pepe q.b.
olio evo q.b.
pecorino stagionato q.b.
Preparazione
Versate la farina integrale su una spianatoia ed impastate lentamente con l’acqua fino ad ottenere un impasto morbido e non appiccicoso. Lasciate riposare per almeno mezz’ora in frigorifero. Nel frattempo preparate il sugo mettendo a scaldare l’olio in una padella con lo spicchio d’aglio e la cipolla tritata.
Soffriggere leggermente quindi togliete l’aglio e versate il pomodoro precedentemente spellato, tagliato a cubetti e privato dei semi, continuate la cottura per almeno 15 minuti e condite con il pepe e il sale , aggiungete il basilico ed il prezzemolo a fine cottura.Riprendete la pasta tagliatela in tante piccole porzioni che lavorerete con il mattarello fino ad ottenere una sfoglia di almeno 3 mm di spessore. Tagliate con la rotella tanti rombi quanto la larghezza della pasta lo permetta (almeno 3 cm di lato)
Fate cuocere la pasta in abbondante acqua salata per 6 minuti o quando la pasta verrà a galla scolate e versate nel sugo preparato in precedenza aggiungete il pecorino grattugiato e impiattate con un filo d’olio a crudo e con un ciuffetto di basilico. Buon appetito.

For pasta
350 g of wholemeal flour
cold water q.b.
For the sauce
1 clove of garlic
1 tablespoon of finely chopped onion
6 large ripe tomatoes
fresh basil q.b.
fresh parsley q.b.
salt pepper q.b.
evo oil q.b.
aged pecorino q.b.
Preparation
Pour the whole wheat flour on a pastry board and knead slowly with the water until a soft and non-sticky dough is obtained. Let it rest for at least half an hour in the refrigerator. Meanwhile, prepare the sauce by heating the oil in a pan with the garlic clove and chopped onion.
Lightly fry then remove the garlic and pour the previously peeled tomato, cut into cubes and deprived of the seeds, continue cooking for at least 15 minutes and season with pepper and salt, add the basil and parsley at the end of cooking. pasta cut into many small portions that you will work with the rolling pin to obtain a sheet of at least 3 mm thick. Cut with the wheel as many diamonds as the width of the pasta allows it (at least 3 cm side)
Cook the pasta in plenty of salted water for 6 minutes or when the pasta will be drained and poured into the sauce previously prepared, add the grated pecorino and serve with a drizzle of olive oil and a tuft of basil. Enjoy your meal.
